1 lb cooked shrimp, peeled and deveined
2 ripe avocados, diced
1 cup cherry tomatoes, halved
½ small red onion, thinly sliced
1 cucumber, diced
2 tbsp fresh cilantro, chopped
Juice of 1 lime
2 tbsp olive oil
Salt and pepper, to taste

Drizzle with lime juice and olive oil.
Toss gently to coat all ingredients.
Season with salt and pepper to taste.
Serve immediately or chill for 15–20 minutes before serving.
Use freshly cooked shrimp or high-quality pre-cooked shrimp.
Add jalapeño or red pepper flakes for a spicy kick.
Best enjoyed fresh, but can be stored in the fridge for up to one day.
