  • 1 lb ground beef
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup salsa
  • 6 large flour tortillas
  • Oil for frying

Instructions

  • In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  • Add onion and garlic, cooking until softened. Stir in chili powder, cumin, paprika, salt, and pepper.
  • Mix in salsa and simmer for 2 minutes. Remove from heat and let cool slightly.
  • Stir in shredded cheeses until well combined.
  • Spoon beef mixture onto the center of each tortilla, fold in sides, and roll tightly.
  • Heat oil in a deep skillet over medium heat. Fry chimichangas until golden brown on all sides.
  • Drain on paper towels and serve hot with desired toppings.

  • For a healthier option, bake at 400ยฐF (200ยฐC) for 20 minutes, flipping halfway.
  • Use a toothpick to secure tortillas before frying.
