  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 2 cups shredded cheddar or Mexican blend cheese
  • 8 large flour tortillas
  • 2 tbsp vegetable oil (for frying)
  • Salt and pepper to taste
  • Optional toppings: sour cream, salsa, guacamole, chopped cilantro

Instructions

  • In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  • Add onions, bell peppers, and taco seasoning to the beef. Cook for 5 minutes, stirring occasionally, until vegetables are tender. Season with salt and pepper.
  • Heat a large skillet over medium heat and add a little oil.
  • Place a tortilla in the skillet, sprinkle a layer of cheese on one half, and then add a layer of the beef mixture. Top with more cheese.
  • Fold the tortilla in half, pressing down gently. Cook for 2-3 minutes on each side until the tortilla is crispy and the cheese is melted.
  • Remove from the skillet and cut into wedges.
  • Repeat with the remaining tortillas and serve hot with your favorite toppings.

  • Use ground turkey or chicken for a lighter option.
  • Add jalapeรฑos or hot sauce for extra spice.
  • Quesadillas can be baked in the oven at 400ยฐF for 10-12 minutes if you prefer a hands-off method.
