12 oz spaghetti or fettuccine
2 chicken breasts, cubed
6 slices bacon, chopped
2 large eggs
1 cup grated parmesan cheese
3 cloves garlic, minced
1/2 cup heavy cream (optional)
Salt and black pepper, to taste
2 tbsp olive oil
Fresh parsley, chopped (for garnish)
Instructions
Cook spaghetti according to package instructions. Reserve 1 cup of pasta water before draining.
In a large skillet, heat olive oil and cook the cubed chicken until golden and fully cooked. Remove and set aside.
In the same skillet, cook chopped bacon until crispy. Add minced garlic and sauté briefly.
In a bowl, whisk eggs, parmesan cheese, and heavy cream (if using). Season with salt and pepper.
Add cooked pasta, chicken, and bacon to the skillet. Remove from heat and quickly stir in the egg mixture, adding reserved pasta water as needed for a creamy consistency.
