Cheesy Chicken and Rice Casserole is a comforting and easy-to-make dish loaded with tender chicken, fluffy rice, and melty cheese.

  • 2 cups cooked chicken (shredded or diced)
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 cup milk
  • 1 can (10.5 oz) cream of chicken soup
  • 1 ½ cups shredded cheddar cheese
  • 1 cup frozen mixed vegetables (optional)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  • In a large bowl, combine chicken broth, milk, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Mix well.
  • Add uncooked rice, shredded chicken, and mixed vegetables (if using) to the mixture and stir until combined.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Cover the dish tightly with aluminum foil and bake for 40-45 minutes, or until the rice is tender.
  • Remove foil, sprinkle shredded cheddar cheese on top, and bake uncovered for an additional 10 minutes until cheese is melted.
