1 lb ground beef
1 packet taco seasoning
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
8 medium flour tortillas
2 tbsp olive oil
Optional toppings: sour cream, salsa, guacamole
Instructions
Heat a skillet over medium heat and cook ground beef until browned. Drain excess fat.
Add taco seasoning and 2-3 tbsp water, cooking for 2 minutes until well combined.
Heat another skillet or griddle over medium heat.
Place one tortilla on the skillet, sprinkle with a mix of cheddar and Monterey Jack cheeses, add a layer of cooked ground beef, and top with more cheese.
Place another tortilla on top and press gently. Cook for 2-3 minutes until the bottom is golden brown, then flip carefully.
Cook the other side for 2-3 minutes until crispy and the cheese is melted.
Repeat with remaining tortillas and filling. Slice into wedges and serve with toppings of choice.
Notes
Use any combination of cheese you prefer.
