  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 medium flour tortillas
  • 2 tbsp olive oil
  • Optional toppings: sour cream, salsa, guacamole

Instructions

  • Heat a skillet over medium heat and cook ground beef until browned. Drain excess fat.
  • Add taco seasoning and 2-3 tbsp water, cooking for 2 minutes until well combined.
  • Heat another skillet or griddle over medium heat.
  • Place one tortilla on the skillet, sprinkle with a mix of cheddar and Monterey Jack cheeses, add a layer of cooked ground beef, and top with more cheese.
  • Place another tortilla on top and press gently. Cook for 2-3 minutes until the bottom is golden brown, then flip carefully.
  • Cook the other side for 2-3 minutes until crispy and the cheese is melted.
  • Repeat with remaining tortillas and filling. Slice into wedges and serve with toppings of choice.
