1 lb ground beef
4 medium potatoes, peeled and diced
1 small onion, diced
3 cups chicken or beef broth
2 cups milk
2 cups shredded cheddar cheese
3 tbsp all-purpose flour
2 tbsp butter
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
Instructions
In a large pot, cook the ground beef over medium heat until browned. Remove and set aside.
In the same pot, melt butter and sauté the onions until soft.
Sprinkle in the flour, stir, and cook for 1 minute. Gradually add broth and milk, whisking to prevent lumps.
Add diced potatoes and bring to a boil, then reduce heat to simmer. Cook until potatoes are tender (about 15 minutes).
Stir in cooked ground beef, cheese, garlic powder, salt, and pepper. Cook until cheese is melted and soup is creamy.
