Warm up with this cheesy hamburger potato soup recipe! Loaded with tender potatoes, ground beef, and melted cheese, this hearty and flavorful soup is perfect for a comforting family dinner.

Ingredients

Scale
  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 small onion, diced
  • 3 cups chicken or beef broth
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 3 tbsp all-purpose flour
  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  • In a large pot, cook the ground beef over medium heat until browned. Remove and set aside.
  • In the same pot, melt butter and sauté the onions until soft.
  • Sprinkle in the flour, stir, and cook for 1 minute. Gradually add broth and milk, whisking to prevent lumps.
  • Add diced potatoes and bring to a boil, then reduce heat to simmer. Cook until potatoes are tender (about 15 minutes).
  • Stir in cooked ground beef, cheese, garlic powder, salt, and pepper. Cook until cheese is melted and soup is creamy.
  • Serve hot and enjoy!

Notes

  • For extra flavor, add cooked bacon crumbles or a sprinkle of paprika.
  • Use sharp cheddar cheese for a richer taste.
  • Adjust the thickness by adding more broth or milk if needed.
