For the Meatloaf Layer:

  • 1 1/2 pounds ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp ketchup
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Potato Layer:

  • 4 cups mashed potatoes
  • 1/4 cup sour cream
  • 1/4 cup butter
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, ketchup, salt, and pepper. Press the meat mixture into a greased baking dish.
  • Bake the meatloaf for 25-30 minutes, until cooked through.
  • In a separate bowl, mix mashed potatoes with sour cream, butter, milk, salt, and pepper until smooth.
  • Spread mashed potatoes over the cooked meatloaf layer.
  • Sprinkle with shredded cheddar cheese (optional).
  • Return to the oven for 10-15 minutes, until the cheese is melted and bubbly.
  • Serve hot and garnish with green onions or parsley, if desired.
