1 large egg
1 tsp almond extract
1 tsp vanilla extract
2 cups all-purpose flour
1 cup almond flour (finely ground almonds)

½ tsp cinnamon (optional)

½ cup cherry preserves or cherry jam (seedless if possible)

Instructions
Make the dough: In a large bowl, cream together butter and sugar until light and fluffy. Add the egg, almond extract, and vanilla extract, mixing until combined.
Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, almond flour, salt, and optional cinnamon. Gradually add the dry ingredients to the butter mixture, mixing until a dough forms.
Chill: Divide the dough into two discs, wrap in plastic, and chill for 30 minutes.
Roll and cut: On a floured surface, roll out the dough to about 1/8-inch thickness. Cut out rounds using a cookie cutter. Cut out small centers in half of the rounds for the top cookies.
Bake: Place the cookies on parchment-lined baking sheets and bake at 350°F (175°C) for 10-12 minutes, or until the edges are lightly golden. Cool completely.
Assemble: Spread cherry preserves on the bottom halves of the cookies, then sandwich with the top cookies (the ones with the cut-out centers).
Garnish: Dust the finished cookies with powdered sugar.
Notes
