  • 1 lb ground chicken
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp olive oil (for frying)

Instructions

  • In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, parsley, oregano, onion powder, salt, and pepper. Mix until well combined.
  • Shape the mixture into 1-inch meatballs.
  • Heat olive oil in a large skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned on all sides and cooked through, about 8-10 minutes.
  • Alternatively, bake the meatballs in a preheated oven at 400°F (200°C) for 15-20 minutes, until golden and fully cooked.
  • Serve with pasta, in a sub, or with your favorite sauce.

Notes

  • To make them even healthier, use whole-wheat breadcrumbs.
  • These meatballs freeze well; store them in an airtight container for up to 3 months.
  • Serve with marinara, barbecue, or teriyaki sauce for variety.
