Ingredients

Scale
  • 2 large boneless, skinless chicken breasts, cut into bite-sized pieces
  • 12 ounces pasta (penne, fusilli, or spaghetti)
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 1/2 cups tomato sauce or marinara sauce
  • 1 medium onion, finely chopped
  • 1 teaspoon Italian seasoning (oregano, basil, thyme)
  • Salt and pepper to taste
  • Optional: Red pepper flakes for spice
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  • Cook the pasta according to package instructions. Drain and set aside.
  • Heat olive oil in a large pan over medium heat. Add chicken pieces and cook until browned and cooked through.
  • Add chopped onion and minced garlic to the pan. Sauté until the onion is translucent.
  • Pour in the tomato sauce and stir in Italian seasoning, salt, and pepper. Let it simmer for a few minutes.
  • Stir in the cooked pasta, then add the shredded mozzarella. Mix until the cheese is melted and the pasta is evenly coated.
  • Serve hot, garnished with fresh basil and Parmesan cheese. Add red pepper flakes if desired.

Notes

  • Use fresh mozzarella for a creamier texture.
  • Adjust seasoning to taste, and add red pepper flakes for a spicy kick.
