For a vegetarian version, substitute with vegetable broth and plant-based proteins like tofu or chickpeas. Perfect for a nourishing meal.

Ingredients

  • Chicken: Whole chicken or bone-in parts (thighs, drumsticks)
  • Carrots: Peeled and sliced
  • Celery: Sliced
  • Onions: Chopped
  • Garlic: Minced
  • Bay Leaves
  • Fresh Herbs: Parsley, thyme, dill
  • Salt and Pepper: To taste
  • Water or Chicken Stock

Instructions

  • Prepare the Chicken: If using a whole chicken, rinse and pat dry. Place in a large pot.
  • Cook the Base: Add chopped carrots, celery, onions, minced garlic, bay leaves, and water or chicken stock. Bring to a boil.
  • Simmer: Reduce heat and let it simmer until the chicken is cooked through, about 1-2 hours.
  • Shred the Chicken: Remove the chicken from the pot, shred the meat, and return to the pot.
  • Season: Add fresh herbs, salt, and pepper to taste. For extra heartiness, add noodles or rice.
  • Vegetarian Option: Replace chicken with plant-based protein, sauté vegetables in olive oil, and use vegetable broth.
  • Finish and Serve: Optionally, add a splash of lemon juice before serving.

Notes

  • Optional Additions: Noodles or rice can be added for a more filling soup.
  • Flavor Tips: Homemade chicken stock adds depth. Lemon juice brightens the flavor.
