This Chicken Tomato Pasta recipe is a quick and delicious dinner featuring tender chicken, ripe tomatoes, and perfectly cooked pasta.

Ingredients

  • 2 chicken breasts, diced
  • 2 cups cherry tomatoes, halved
  • 3 garlic cloves, minced
  • 1 medium onion, finely chopped
  • 2 tbsp olive oil
  • 1/2 tsp red chili flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 250g penne or spaghetti
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  • Cook pasta according to package instructions; reserve 1 cup of pasta water.
  • Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook until golden.
  • Remove chicken from the skillet. In the same skillet, sauté onions and garlic until fragrant.
  • Add cherry tomatoes and cook until softened, about 5 minutes.
  • Return chicken to the skillet, stir in chili flakes, and cook for 2-3 minutes.
  • Add cooked pasta to the skillet, tossing everything together. Adjust consistency with reserved pasta water.
  • Sprinkle Parmesan cheese, garnish with fresh basil, and serve hot.

Notes

  • You can substitute cherry tomatoes with canned diced tomatoes.
  • Add a splash of white wine for extra flavor.
  • Use whole wheat or gluten-free pasta if preferred.
