Ingredients

Scale
  • 1 lb chicken breast or thighs, diced
  • 1/2 cup peanut butter (creamy or crunchy)
  • 2 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp rice vinegar
  • 1 tbsp honey or brown sugar
  • 1/4 cup chicken broth or water (adjust for sauce consistency)
  • 1/2 tsp red chili flakes (optional)
  • 1/4 cup chopped peanuts (for garnish)
  • 2 green onions, sliced (for garnish)

Instructions

  • Cook the Chicken: Heat sesame oil in a large skillet or wok over medium heat. Add the diced chicken and cook until golden brown, about 5-7 minutes. Remove from skillet and set aside.
  • Prepare the Sauce: In the same skillet, add garlic and ginger. Sauté for 1-2 minutes until fragrant. Stir in peanut butter, soy sauce, hoisin sauce, rice vinegar, honey, and chicken broth. Mix until smooth and creamy.
  • Combine: Add the cooked chicken back into the skillet. Stir to coat the chicken evenly with the sauce. Cook for another 3-5 minutes until the sauce thickens.
  • Serve: Garnish with chopped peanuts and green onions. Serve over steamed rice or noodles.

Notes

  • Adjust the sauce thickness by adding more chicken broth if needed.
  • For a spicier kick, increase the red chili flakes or add sriracha.
  • Pair with stir-fried vegetables for a complete meal.
