Corn Fritters are crispy, golden bites made with fresh or canned corn, mixed into a seasoned batter, and fried to perfection. Ingredients

  • Corn kernels (fresh, canned, or frozen)
  • All-purpose flour
  • Baking powder
  • Egg
  • Milk
  • Green onions (chopped)
  • Fresh parsley (chopped)
  • Garlic powder
  • Salt
  • Pepper
  • Oil for frying
  • Sour cream or dipping sauce (optional)

Instructions

  • In a large bowl, mix flour, baking powder, garlic powder, salt, and pepper.
  • In a separate bowl, whisk egg and milk. Stir into the dry ingredients.
  • Fold in corn kernels, green onions, and parsley.
  • Heat oil in a skillet over medium heat. Drop spoonfuls of batter into the hot oil, pressing slightly to flatten.
  • Fry for 2-3 minutes on each side, or until golden and crispy.
  • Drain on paper towels and serve with sour cream or your favorite dipping sauce.

Notes

  • Use fresh corn for the best flavor, but canned or frozen (thawed) corn works well too.
