Ingredients

Scale

For the Pork Chops:

  • 4 bone-in pork chops
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • 1 cup buttermilk
  • 1 egg
  • ½ cup vegetable oil (for frying)

For the Bacon Gravy:

  • 4 slices bacon, chopped
  • 2 tablespoons bacon drippings
  • 2 tablespoons butter
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • Salt and black pepper, to taste

Instructions

  • Prepare the Pork Chops: In a shallow bowl, mix flour, salt, black pepper, garlic powder, onion powder, and paprika.
  • In another bowl, whisk together buttermilk and egg.
  • Dredge each pork chop in the flour mixture, then dip into the buttermilk mixture, and coat again in flour.
  • Heat vegetable oil in a large skillet over medium heat. Fry pork chops for 4-5 minutes per side until golden brown and cooked through. Transfer to a paper towel-lined plate.
  • Make the Bacon Gravy: Cook chopped bacon in a skillet until crispy. Remove bacon and set aside, leaving about 2 tablespoons of bacon drippings.
  • Add butter to the skillet. Stir in flour and cook for 1-2 minutes until lightly browned.
  • Gradually whisk in milk, stirring constantly, until the gravy thickens. Season with salt and black pepper. Stir in crispy bacon.
  • Serve pork chops hot with bacon gravy drizzled on top.

Notes

  • For extra crispy pork chops, let them rest for 5 minutes before serving.
  • Serve with mashed potatoes, biscuits, or green beans for a full Southern meal.
  • Use a meat thermometer to ensure pork reaches an internal temp of 145°F.
