Cowboy Chili is a robust and hearty dish featuring ground beef, kidney and black beans, and a flavorful blend of spices including chili powder, cumin, and smoked paprika.   • 2 pounds ground beef
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 large bell pepper, diced
  • 2 cans kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 can tomato paste
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 tablespoon olive oil

Instructions

  • Heat olive oil in a large pot over medium heat. Sauté the diced onion and bell pepper until softened, about 5 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Add the ground beef and cook until browned, breaking it up with a spoon.
  • Stir in the chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne pepper (if using).
  • Add the diced tomatoes, tomato paste, kidney beans, black beans, and beef broth. Stir well to combine.
  • Bring the chili to a simmer, then reduce heat to low. Cover and cook for 30 minutes, stirring occasionally.
  • Adjust seasoning to taste and serve hot.

Notes

  • For a spicier chili, increase the cayenne pepper or add diced jalapeños.
  • This chili can be made in advance and tastes even better the next day as the flavors meld together.
