  • 2 cups cooked chicken (shredded or cubed)
  • 4 cups fresh spinach (roughly chopped)
  • 8 oz cream cheese (softened)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup Parmesan cheese
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 2 cloves garlic (minced)
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat. Add garlic and spinach, cooking until wilted. Set aside.
  • In a large bowl, mix cream cheese, sour cream, chicken broth, onion powder, salt, and pepper until smooth.
  • Stir in the cooked chicken, wilted spinach, and 1/2 cup of mozzarella cheese.
  • Transfer the mixture to a greased 9x13-inch baking dish.
  • Top with the remaining mozzarella and Parmesan cheese.
  • Bake for 20-25 minutes, until the casserole is bubbly and the cheese is golden.
