2 tbsp butter
1 small onion, diced
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
3 cups chicken broth
1 cup heavy cream
1 cup milk
2 cups cooked chicken, shredded
1 lb potato gnocchi
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
1 cup fresh spinach, chopped
1/4 cup grated Parmesan cheese
Instructions
In a large pot, melt butter over medium heat. Add onion, garlic, carrot, and celery. Sauté until softened.
Pour in chicken broth, heavy cream, and milk. Stir well.
Add shredded chicken, gnocchi, Italian seasoning, salt, and pepper. Bring to a gentle simmer.
Cook until gnocchi is tender, about 5 minutes.
Stir in spinach and Parmesan cheese. Simmer for another 2 minutes.
Serve hot and enjoy!
Notes
For a thicker soup, mix 1 tbsp cornstarch with 2 tbsp water and add to the pot.
