  • 2 tbsp butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk
  • 2 cups cooked chicken, shredded
  • 1 lb potato gnocchi
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup fresh spinach, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  • In a large pot, melt butter over medium heat. Add onion, garlic, carrot, and celery. Sauté until softened.
  • Pour in chicken broth, heavy cream, and milk. Stir well.
  • Add shredded chicken, gnocchi, Italian seasoning, salt, and pepper. Bring to a gentle simmer.
  • Cook until gnocchi is tender, about 5 minutes.
  • Stir in spinach and Parmesan cheese. Simmer for another 2 minutes.
  • Serve hot and enjoy!

Notes

  • For a thicker soup, mix 1 tbsp cornstarch with 2 tbsp water and add to the pot.
  • Substitute half-and-half for a lighter version.
  • Use rotisserie chicken for convenience.
