  • 2 boneless, skinless chicken breasts, diced
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/3 cup all-purpose flour
  • 2 tbsp butter
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • In a large pot, melt butter over medium heat. Add onion, carrots, celery, and garlic. Cook until softened, about 5 minutes.
  • Add diced chicken and cook until browned, about 5-7 minutes.
  • Sprinkle flour over the chicken and vegetables, stirring to coat. Cook for 1-2 minutes to remove the raw flour taste.
  • Gradually stir in the chicken broth, thyme, and rosemary. Bring to a simmer, then reduce heat and cook for 10 minutes until the soup thickens slightly.
  • Stir in the heavy cream and simmer for another 5 minutes. Season with salt and pepper to taste.
  • Garnish with fresh parsley and serve hot with crusty bread.

  • For a lighter version, substitute heavy cream with half-and-half or milk.
