Instructions

  1. In a large pot, cook bacon until crispy. Remove and set aside, leaving a small amount of grease in the pot.
  2. Add butter, onions, and garlic to the pot and sauté until soft.
  3. Stir in flour, cooking for 1 minute to make a roux.
  4. Slowly add broth, whisking to combine. Add potatoes, bring to a boil, then reduce heat and simmer until tender (15-20 minutes).
  5. Stir in heavy cream, cheddar cheese, and smoked paprika. Season with salt and pepper.
  6. Let the soup simmer for 5 more minutes. Add optional ingredients like sour cream, corn, or carrots if using.
  7. Serve hot, garnished with crispy bacon, green onions, and parsley.

  • Yukon Gold potatoes add a buttery texture, while Russets will break down more for an extra creamy consistency.
