  • 12 oz rigatoni pasta
  • 1 lb Italian sausage (mild or spicy)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 cup crushed tomatoes
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  • Cook the rigatoni pasta according to package instructions. Reserve 1/2 cup pasta water and drain the rest.
  • Heat olive oil in a large skillet over medium heat. Add the sausage, breaking it up with a spoon, and cook until browned.
  • Add diced onion and garlic to the skillet and sauté until softened and fragrant.
  • Stir in crushed tomatoes, heavy cream, chicken broth, and red pepper flakes (if using). Simmer for 5-7 minutes until the sauce thickens.
  • Add Parmesan cheese and mix until melted and combined. Season with salt and pepper.
  • Toss the cooked rigatoni into the skillet, adding reserved pasta water as needed to loosen the sauce.
  • Garnish with fresh parsley or basil and serve immediately.

Notes

  • Use spicy sausage for added heat or mild sausage for a more subtle flavor.
  • Substitute rigatoni with penne or any other short pasta shape if needed.
  • Leftovers can be stored in the refrigerator for up to 3 days.
