  • 1/2 cup powdered sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup rainbow sprinkles (plus extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together butter, granulated sugar, and powdered sugar until fluffy.
  3. Add eggs one at a time, mixing well after each addition, then add vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Fold in sprinkles, then scoop dough into 2-inch balls and place on baking sheets.
  7. Gently press down each cookie and add extra sprinkles on top.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
