This Easy Taco Casserole is a family-friendly dish packed with flavors of seasoned ground beef, black beans, corn, and diced tomatoes with green chilies. Layered with soft flour tortillas and topped with melted Mexican blend cheese, this casserole is a delicious twist on traditional tacos.   • 1 pound ground beef
  • 1 packet (1 oz) taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 can (8 oz) tomato sauce
  • 1 1/2 cups corn kernels (fresh, frozen, or canned)
  • 8 small flour tortillas or 6 large flour tortillas
  • 2 cups shredded Mexican blend cheese
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped green onions
  • Sour cream, salsa, and guacamole for serving (optional)

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Stir in taco seasoning, black beans, diced tomatoes with green chilies, and tomato sauce. Simmer for 5 minutes.
  • In a 9x13-inch baking dish, layer the tortillas, meat mixture, corn, and shredded cheese, repeating the layers until all ingredients are used, ending with cheese on top.
  • Sprinkle with sliced black olives if using.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Garnish with chopped green onions. Serve with sour cream, salsa, and guacamole on the side.
