This easy taco casserole with Fritos is a fun and flavorful twist on taco night! Layered with seasoned ground beef, beans, cheese, and crunchy Fritos, this casserole is a family favorite. Perfect for a quick weeknight dinner or potluck, it combines classic taco flavors with cheesy, crunchy goodness. Top with sour cream, salsa, or guacamole for a delicious meal!

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans or pinto beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies (optional)
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 bag (9.25 oz) Fritos corn chips
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • 2 green onions, sliced (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning and follow package instructions. Stir in black beans and diced tomatoes, simmer for 3-4 minutes.
  • In a greased 9x13-inch baking dish, spread half of the Fritos in an even layer.
  • Pour the beef mixture over the Fritos, then sprinkle with 1 1/2 cups of shredded cheese.
  • Add the remaining Fritos on top and sprinkle the rest of the cheese.
  • Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  • Remove from oven and let cool slightly. Top with sour cream, salsa, green onions, and cilantro if desired.
  • Serve hot and enjoy!

Notes

  • You can substitute ground turkey or chicken for a lighter version.
  • Add corn or jalapeños to the beef mixture for extra flavor and texture.
  • This dish reheats well for leftovers the next day.
