1 lb ground pork (or chicken/turkey)
1 tbsp sesame oil
1 small onion, diced
3 cloves garlic, minced
1 tbsp fresh ginger, minced
4 cups coleslaw mix (or shredded cabbage)
1 medium carrot, julienned
3 tbsp soy sauce (or coconut aminos)
1 tsp rice vinegar
1/2 tsp red pepper flakes (optional)
2 green onions, sliced
1 tbsp toasted sesame seeds (optional)
Instructions
Heat sesame oil in a large skillet over medium heat.
Add ground pork and cook until browned, breaking it up as it cooks.
Stir in onion, garlic, and ginger; sauté until fragrant.
Add coleslaw mix, carrots, soy sauce, rice vinegar, and red pepper flakes. Stir well.
Cook for 5-7 minutes, until cabbage is tender but slightly crisp.
Remove from heat, garnish with green onions and sesame seeds.
Serve hot and enjoy!
