2 boneless, skinless chicken breasts, diced
3 cups baby potatoes, halved
3 cloves garlic, minced
½ cup grated Parmesan cheese
1 tsp Italian seasoning
½ tsp paprika
Salt and pepper, to taste
2 tbsp olive oil
2 tbsp butter
¼ cup chicken broth
2 tbsp fresh parsley, chopped
Instructions
Heat olive oil in a large skillet over medium-high heat.
Season the chicken with salt, pepper, paprika, and Italian seasoning.
Add chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
In the same skillet, melt butter and add baby potatoes. Cook until golden and tender, about 10-12 minutes.
Stir in garlic and cook for 1 minute until fragrant.
Pour in chicken broth and deglaze the skillet, scraping up any browned bits.
Return the chicken to the skillet, sprinkle Parmesan cheese, and toss to coat.
