  • 2 boneless, skinless chicken breasts, diced
  • 3 cups baby potatoes, halved
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp butter
  • ¼ cup chicken broth
  • 2 tbsp fresh parsley, chopped

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Season the chicken with salt, pepper, paprika, and Italian seasoning.
  • Add chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
  • In the same skillet, melt butter and add baby potatoes. Cook until golden and tender, about 10-12 minutes.
  • Stir in garlic and cook for 1 minute until fragrant.
  • Pour in chicken broth and deglaze the skillet, scraping up any browned bits.
  • Return the chicken to the skillet, sprinkle Parmesan cheese, and toss to coat.
  • Garnish with fresh parsley and serve warm.
