2 pounds red potatoes
6 slices bacon
1 small onion, finely chopped
1/3 cup apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Boil potatoes until tender, about 15–20 minutes. Drain, cool slightly, and slice.
Cook bacon in a skillet until crisp. Remove and crumble.
In the same skillet, cook onion in bacon fat until soft.
