  • 4 medium Russet or Yukon Gold potatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme or oregano
  • 1 cup shredded cheddar cheese (optional)
  • Fresh parsley or green onions for garnish (optional)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add diced onions and garlic, sauté until fragrant.
  • Add ground beef, cook until browned, breaking it apart.
  • Stir in diced potatoes and bell pepper. Cook until potatoes are tender, stirring occasionally.
  • Season with paprika, salt, pepper, and thyme or oregano.
