This Guinness chocolate cake is incredibly moist and rich, combining the bold flavors of stout with chocolate for a delicious treat.

Ingredients

  • 1 cup Guinness beer
  • 1 cup unsalted butter
  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • ¾ cup sour cream
  • 1 tsp vanilla extract

For the Frosting:

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • ¼ cup cocoa powder
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a saucepan, combine Guinness and butter; heat until melted. Whisk in cocoa powder until smooth.
  3. In a large bowl, mix sugar, flour, baking powder, baking soda, and salt.
  4. Add the Guinness mixture, eggs, sour cream, and vanilla; beat until combined.
  5. Pour batter into prepared pans and bake for 30-35 minutes. Cool completely.

For the Frosting:

  1. Beat cream cheese and butter until smooth. Gradually add powdered sugar and cocoa; mix until creamy.
  2. Add milk and vanilla; beat until desired consistency. Frost the cooled cakes.

Notes

  • For extra flavor, add a splash of vanilla extract to the cake batter.
  • Store leftovers in an airtight container for up to 3 days.
