  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups old-fashioned oats
  • 1 cup peanut butter
  • 1 cup mini chocolate chips
  • 1 cup M&M’s (preferably Halloween colors)
  • Candy eyes for decoration

Instructions

  • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the butter, granulated sugar, and brown sugar until fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract and peanut butter.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture.
  • Stir in the oats, chocolate chips, and M&M’s.
  • Scoop dough onto the baking sheet, about 2 tablespoons per cookie. Flatten slightly, then press candy eyes into the cookies.
  • Bake for 10-12 minutes or until edges are golden brown. Let cool on a wire rack.
