Ingredients

  • Chicken Breasts (or thighs): 2 large boneless, skinless chicken breasts or 4 chicken thighs
  • White Beans: 2 cans (Great Northern or Cannellini), drained and rinsed
  • Green Chiles: 1 can (4 oz) diced
  • Chicken Broth: 4 cups low-sodium
  • Onion: 1 medium, finely chopped
  • Garlic: 4 cloves, minced
  • Ground Cumin: 2 teaspoons
  • Oregano: 1 teaspoon, dried
  • Chili Powder: 1 teaspoon
  • Ground Coriander: 1 teaspoon
  • Salt: 1 teaspoon (or to taste)
  • Pepper: 1/2 teaspoon
  • Cream Cheese: 4 oz, softened
  • Lime Juice: Juice of 1 lime
  • Cilantro: 1/4 cup, chopped, for garnish
  • Shredded Cheese: Optional, for topping
  • Tortilla Chips: Optional, for serving

Instructions

  • Set the Instant Pot to sauté mode. Add chopped onion and garlic, sauté until softened.
  • Add chicken breasts (or thighs), white beans, green chiles, chicken broth, cumin, oregano, chili powder, coriander, salt, and pepper.
  • Seal the Instant Pot and cook on high pressure for 15 minutes. Let it naturally release for 10 minutes before quick-releasing the remaining pressure.
  • Remove the chicken, shred it, and return it to the pot.
  • Stir in the softened cream cheese and lime juice until fully incorporated.
  • Serve hot, garnished with cilantro, shredded cheese, and tortilla chips if desired.
