  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/2 cup chickpeas, drained and rinsed
  • 1/2 cup provolone cheese, diced
  • 1/2 cup salami, chopped
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine romaine, tomatoes, cucumber, red onion, olives, chickpeas, provolone, salami, and Parmesan.
  • In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, garlic powder, salt, and pepper.
