  • 1 packet taco seasoning
  • 1 medium onion, chopped
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 can (4 oz) diced green chiles
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1/4 cup water
  • 1/4 cup green bell pepper, diced
  • 1/4 cup red bell pepper, diced
  • 1 can (8 oz) refrigerated biscuit dough
  • Salt and pepper to taste

Optional Toppings:

  • 1/2 cup sliced black olives
  • 1/4 cup sliced jalapeños
  • Fresh cilantro, chopped
  • Salsa or hot sauce
  • Extra cheese
  • Green onions for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and chopped onion over medium heat until browned. Drain excess fat.
  3. Add taco seasoning, water, and diced tomatoes with green chilies. Stir to combine, then set aside.
  4. In a separate bowl, mix sour cream, mayonnaise, and both shredded cheeses.
  5. In a greased 9x13 baking dish, spread the biscuit dough evenly on the bottom.
  6. Layer the cooked beef mixture over the dough, then top with the cheese mixture.
  7. Add diced bell peppers on top.
  8. Bake for 30-35 minutes, or until golden and bubbly.
  9. Optional: Add toppings like black olives, jalapeños, extra cheese, or green onions before serving.
