It's an easy, one-pot meal perfect for busy weeknights, with rich tomato broth, tender noodles, and gooey melted cheese. Serve topped with ricotta, mozzarella, and fresh basil for the ultimate Italian comfort food experience.

Ingredients

  • Ground meat (beef, pork, or turkey)
  • Medium yellow onion, finely chopped
  • Minced garlic cloves
  • Tomato paste
  • Crushed tomatoes
  • Chicken or beef broth
  • Italian seasoning (basil, oregano, thyme, rosemary)
  • Bay leaf
  • Lasagna noodles, broken into pieces
  • Ricotta cheese
  • Shredded mozzarella cheese
  • Grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil, chopped

Instructions

  • Sauté the ground meat in a large pot until browned. Add chopped onion and minced garlic, cooking until softened.
  • Stir in tomato paste, followed by crushed tomatoes, broth, Italian seasoning, bay leaf, salt, and pepper. Bring to a boil.
  • Reduce heat and simmer for 20 minutes. Add broken lasagna noodles and cook until tender.
  • Serve the soup in bowls, topping each with a dollop of ricotta, shredded mozzarella, grated Parmesan, and chopped fresh basil.

Notes

  • For a leaner option, use ground turkey instead of beef.
  • Customize with your favorite cheese or add a dash of red pepper flakes for some heat.
