Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1/3 cup fresh lemon juice
  • 1 tsp lemon zest
  • 1 cup orzo or rice (optional)
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic, and sauté until softened.
  2. Add chicken breasts, chicken broth, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes, until the chicken is cooked through.
  3. Remove chicken from the pot, shred it using two forks, and return to the pot.
  4. Stir in lemon juice, lemon zest, and orzo (if using). Simmer for an additional 5-10 minutes, until the orzo is tender.
  5. Adjust seasoning with salt and pepper to taste, garnish with fresh parsley, and serve hot.

Notes

  • For a creamier version, stir in 1/2 cup of heavy cream before serving.
  • You can use rice, couscous, or noodles instead of orzo.
  • This soup freezes well for future meals; just leave out the orzo until reheating.
