  • 6 medium russet potatoes (peeled, cubed)
  • 1 medium onion (finely chopped)
  • 4 garlic cloves (minced)
  • 4 cups chicken broth (or vegetable broth)
  • 1 ½ cups whole milk (or cream)
  • 1 cup sour cream (or Greek yogurt)
  • 2 cups shredded cheddar cheese
  • 6 strips bacon (cooked, crumbled)
  • 3 tbsp butter
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste
  • Optional: green onions, chives, smoked paprika, cayenne

Instructions

  • Sauté onions and garlic in butter until soft.
  • Add potatoes, broth; bring to a boil. Simmer until potatoes are tender.
  • Mash half the potatoes in the pot for a thicker consistency.
  • Stir in flour, milk, sour cream, and cheese. Mix until smooth.
  • Add crumbled bacon and optional seasonings.

  • For a thicker soup, mash more potatoes or use heavy cream.
  • Vegetarian version: substitute bacon with plant-based bacon and use vegetable broth.
