  • 8 oz pasta (penne or rigatoni)
  • 2 chicken breasts, halved and pounded thin
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp red pepper flakes (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  • Cook pasta according to package directions. Drain and set aside.
  • Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper, and cook until golden brown on both sides. Remove and set aside.
  • In the same skillet, sauté onions and garlic until soft and fragrant. Add sun-dried tomatoes and cook for 2 minutes.
  • Pour in chicken broth and cream, bringing the mixture to a simmer. Stir in Parmesan cheese until melted.
  • Add the chicken back into the skillet and simmer for 5 minutes until the sauce thickens.
  • Toss in the cooked pasta, mix until well coated, and heat through.
  • Garnish with fresh basil and serve hot.

Notes

  • For added flavor, you can deglaze the pan with a splash of white wine before adding the cream.
  • Red pepper flakes can be adjusted to your spice preference.
  • Substitute spinach for sun-dried tomatoes if desired.
