This Old-Fashioned Beef Stew Recipe is a hearty, flavorful dish made with tender beef, root vegetables, and a rich broth. Perfect for chilly days, it’s a comforting classic that’s easy to make and loved by the whole family.

Ingredients

  • 2 lbs beef stew meat, cut into cubes
  • 3 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup peas (optional)

Instructions

  • Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes on all sides, then set aside.
  • In the same pot, sauté onions and garlic until softened.
  • Add carrots, potatoes, and browned beef back into the pot. Stir to combine.
  • Pour in beef broth, wine (if using), tomato paste, and Worcestershire sauce. Add thyme, bay leaf, salt, and pepper.
  • Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, stirring occasionally.
  • In the last 15 minutes, add peas (if using). Remove bay leaf before serving.

Notes

  • For thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir into the pot during the last 10 minutes of cooking.
  • Serve with crusty bread for a complete meal.
