  • ½ cup creamy peanut butter
  • 1 cup coconut milk (or heavy cream)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar (or lime juice)
  • 1 tablespoon honey
  • 1 teaspoon ground ginger
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • 2 tablespoons chopped cilantro (for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add the cubed chicken, season with salt and pepper, and cook for 6-8 minutes until browned and cooked through. Remove from skillet and set aside.
  • In the same skillet, add chopped onion and sauté until softened, about 3-4 minutes. Add minced garlic and cook for 1 minute until fragrant.
  • Stir in peanut butter, coconut milk, soy sauce, rice vinegar, honey, ginger, and red pepper flakes (if using). Cook, stirring constantly, until the sauce is smooth and creamy.
  • Return the cooked chicken to the skillet and toss to coat in the peanut sauce. Simmer for 5-7 minutes, allowing the flavors to meld.
  • Garnish with chopped cilantro and serve over rice or noodles.
