For the Red Velvet Brownie Layer:

  • 1 cup unsalted butter, melted
  • 1 ½ cups sugar
  • 2 large eggs
  • 1 tbsp red food coloring
  • 2 tsp vanilla extract
  • 1 ¼ cups all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ¼ tsp salt

For the Cheesecake Swirl:

  • 8 oz cream cheese, softened
  • ¼ cup sugar
  • 1 large egg
  • ½ tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper.
  • In a bowl, whisk together the melted butter and sugar. Add the eggs, red food coloring, and vanilla extract, and mix until smooth.
  • In another bowl, sift together flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet mixture and stir until combined.
  • Reserve ¼ cup of the red velvet batter for swirling and pour the remaining batter into the prepared baking pan.
  • In a separate bowl, beat the softened cream cheese, sugar, egg, and vanilla extract until smooth.
  • Spread the cream cheese mixture over the red velvet batter in the pan.
  • Drop spoonfuls of the reserved red velvet batter on top of the cheesecake layer. Use a knife or toothpick to swirl the batters together for a marbled effect.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the brownies to cool completely in the pan before slicing and serving.
