This Roast Beef Reuben Recipe combines tender roast beef, sauerkraut, Swiss cheese, and Thousand Island dressing for a delicious twist on the classic sandwich.

Ingredients

  • 8 slices rye bread
  • 1 lb roast beef, thinly sliced
  • 1 cup sauerkraut, drained
  • 8 slices Swiss cheese
  • 1/2 cup Thousand Island dressing
  • 2 tbsp butter, softened

Instructions

  1. Preheat a skillet or griddle over medium heat.
  2. Spread butter on one side of each slice of rye bread.
  3. Lay 4 slices of bread, butter-side down, on the skillet.
  4. Layer each with roast beef, sauerkraut, Swiss cheese, and Thousand Island dressing.
  5. Top with remaining bread slices, butter-side up.
  6. Grill each sandwich for 3-4 minutes per side, pressing lightly with a spatula, until golden brown and cheese is melted.
  7. Slice and serve warm.

Notes

  • You can substitute corned beef for roast beef for a more traditional flavor.
