8 slices rye bread
1 lb roast beef, thinly sliced
1 cup sauerkraut, drained
8 slices Swiss cheese
1/2 cup Thousand Island dressing
2 tbsp butter, softened
Instructions
Preheat a skillet or griddle over medium heat.
Spread butter on one side of each slice of rye bread.
Lay 4 slices of bread, butter-side down, on the skillet.
Layer each with roast beef, sauerkraut, Swiss cheese, and Thousand Island dressing.
Top with remaining bread slices, butter-side up.
Grill each sandwich for 3-4 minutes per side, pressing lightly with a spatula, until golden brown and cheese is melted.
Slice and serve warm.
Notes
You can substitute corned beef for roast beef for a more traditional flavor.
