  • 1 lb (450g) smoked sausage (kielbasa, Italian, or andouille)
  • 1.5 lbs (700g) potatoes (Yukon Gold, red, or baby potatoes)
  • 1 lb (450g) fresh green beans (trimmed and halved)
  • 1 medium onion (thinly sliced)
  • 4 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • ½ cup shredded cheddar cheese (optional)

Instructions

  • Preheat oven to 400°F (200°C).
  • Toss the potatoes with olive oil, smoked paprika, thyme, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
  • In a skillet, cook the sausage slices until browned. Set aside.
  • Sauté the onion and garlic in the same skillet until softened.
  • Add the green beans to the skillet and cook for 5-7 minutes until tender.
  • In a large casserole dish, combine roasted potatoes, sausage, green beans, onions, and garlic.
  • Top with shredded cheddar cheese if using, and bake for an additional 10 minutes until the cheese is melted and golden.
  • Serve warm and enjoy!

  • You can substitute other sausages or add more veggies, like bell peppers, for extra flavor.
  • For a lower-carb version, swap potatoes with cauliflower florets.
