  • 2 cups cooked, shredded chicken
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (10 oz) red enchilada sauce
  • 1 can (10 oz) green enchilada sauce
  • 1/2 cup sour cream
  • 1/2 cup black beans (optional)
  • 4 large flour tortillas
  • 2 tbsp chopped cilantro (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix shredded chicken, cooked rice, and black beans (if using).
  3. Lay a tortilla flat, fill it with the chicken mixture, and sprinkle with cheddar cheese. Roll tightly.
  4. Place burritos seam-side down in a greased baking dish.
  5. In another bowl, combine red enchilada sauce, green enchilada sauce, and sour cream. Mix well.
  6. Pour the sauce over the burritos evenly and top with Monterey Jack cheese.
  7. Bake for 25 minutes or until cheese is melted and bubbly.
  8. Garnish with cilantro and serve hot.

  • For added spice, include diced jalapeños in the filling.
  • Serve with guacamole, salsa, or a dollop of sour cream.
  • Use rotisserie chicken for convenience.
