  • 1 lb cooked shrimp, chopped

  • 2 cups cooked sushi rice

  • 1 tbsp rice vinegar

  • 1/2 tsp sugar

  • 1/2 tsp salt

  • 1 avocado, diced

  • 2 tbsp mayonnaise

  • 1 tbsp sriracha

  • 1 tsp sesame oil

  • 1 tsp soy sauce

  • 1 tsp lime juice

  • 1/2 cucumber, diced

  • Optional toppings: sesame seeds, chopped green onions, nori strips

Instructions

  1. Mix sushi rice with rice vinegar, sugar, and salt. Let cool.

  2. In a bowl, combine shrimp with mayonnaise, sriracha, lime juice, soy sauce, and sesame oil.

  3. Dice avocado and cucumber and set aside.

  4. In a small bowl or mold, layer 1/3 cup sushi rice, followed by cucumber, avocado, and spicy shrimp. Press down lightly.

  5. Invert stack onto a plate, top with sesame seeds, green onions, or nori if desired.

  6. Repeat with remaining ingredients and serve immediately.

Notes

You can prepare components ahead of time and assemble just before serving. Adjust spice level to taste.
