Sweet Strawberry Shortcake Cheesecake Rolls combine fluffy cake, rich cheesecake filling, and fresh strawberries for a decadent treat.

Ingredients

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp salt
  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar
  • ½ cup heavy cream
  • 1 cup fresh strawberries, diced
  • ½ cup strawberry jam
  • ½ cup crushed shortbread cookies

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a bowl, whisk eggs and sugar until fluffy. Add vanilla, flour, baking powder, and salt. Mix until smooth.
  • Spread batter evenly onto the prepared baking sheet. Bake for 10-12 minutes.
  • While warm, roll the cake with parchment paper and let it cool.
  • In a bowl, beat cream cheese, powdered sugar, and heavy cream until smooth.
  • Unroll the cooled cake and spread cream cheese filling over it.
  • Add diced strawberries and drizzle with strawberry jam.
  • Roll the cake back up tightly and refrigerate for 1 hour.
  • Before serving, sprinkle with crushed shortbread cookies. Slice and enjoy!

Notes

  • Chill the roll before slicing for cleaner cuts.
