    • 1/2 cup unsalted butter, softened
    • 1/2 cup vegetable oil
    • 1 cup granulated sugar
    • 1/2 cup light brown sugar, packed
    • 3 large eggs, room temperature
    • 2 teaspoons vanilla extract
    • 1/2 cup buttermilk, room temperature
    • 2 large apples, peeled, cored, and diced (Granny Smith or Honeycrisp)
  • For the Caramel Sauce:
    • 1 cup granulated sugar
    • 1/4 cup water
    • 4 tablespoons unsalted butter, cubed
    • 1/2 cup heavy cream, room temperature
    • 1 teaspoon vanilla extract
    • Pinch of sea salt
  • For the Topping (Optional):
    • Chopped toasted pecans
    • Sliced apples for garnish
    • Powdered sugar

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
  • In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  • In a large bowl, beat butter, oil, granulated sugar, and brown sugar until light and fluffy.
  • Add eggs one at a time, then mix in vanilla extract.
  • Gradually add flour mixture, alternating with buttermilk, beginning and ending with the flour mixture.
  • Fold in diced apples and pour batter into prepared cake pan.
  • Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Let cool.
  • For the caramel sauce, heat sugar and water in a saucepan over medium heat until amber-colored. Stir in butter, then heavy cream, vanilla, and sea salt.
  • Drizzle caramel over the cooled cake and top with optional pecans, sliced apples, or powdered sugar.
