1 lb Italian sausage
1 tbsp olive oil
1 small onion, diced
3 garlic cloves, minced
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
2 cups heavy cream
1 tsp dried basil
1 tsp dried oregano
2 cups fresh spinach
12 oz cheese tortellini (fresh or frozen)
Salt and pepper to taste
Instructions
Heat olive oil in a large pot over medium heat. Cook sausage until browned, breaking it into crumbles. Remove and set aside.
Add onion and garlic to the pot, sauté until softened.
Pour in chicken broth, diced tomatoes, and heavy cream. Add dried basil and oregano. Simmer for 10 minutes.
Return the cooked sausage to the pot. Stir in fresh spinach and cheese tortellini. Cook until tortellini is tender, about 5-7 minutes.
Season with salt and pepper to taste. Serve hot and enjoy!
Notes
For a lighter option, substitute heavy cream with half-and-half.
