This hearty sausage tortellini soup recipe combines creamy broth, Italian sausage, cheese tortellini, and fresh vegetables for a quick and comforting meal.

Ingredients

  • 1 lb Italian sausage
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups heavy cream
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 2 cups fresh spinach
  • 12 oz cheese tortellini (fresh or frozen)
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large pot over medium heat. Cook sausage until browned, breaking it into crumbles. Remove and set aside.
  • Add onion and garlic to the pot, sauté until softened.
  • Pour in chicken broth, diced tomatoes, and heavy cream. Add dried basil and oregano. Simmer for 10 minutes.
  • Return the cooked sausage to the pot. Stir in fresh spinach and cheese tortellini. Cook until tortellini is tender, about 5-7 minutes.
  • Season with salt and pepper to taste. Serve hot and enjoy!
